Organic tomatoes: benefits and properties
Organic tomatoes are the best source of the carotenoid pigment lycopene, which gives them their red colour. Organic tomatoes contain all four major carotenoids: alpha and beta carotene, lutein and lycopene. Organic tomatoes are rich in vitamin C and contain small amounts of vitamin A, folate and potassium.
Several studies have shown a correlation of reduced incidence of macular degeneration, prostate cancer, stomach cancer and cardiovascular disease in those who consume high quantities of food containing lycopene.
