There are many varieties of lentils, the colour is the main difference between them and ranges from a pale colour (light green, blonde, pink) to dark (dark green, brown, violet). The flavour also changes according to the variety of lentil. Lentils are rich in fibre and minerals as well as vitamins they have been considered as “the meat of the poor” since ancient times.
